As we enter the winter months at solita, we look to Executive Chef Deborah Schneider’s celebrated menu of Baja-inspired cuisine for added comfort.
Her menu, which highlights traditional favorites with innovative dishes from the wood grill and smoker, features hearty, warming dishes, such as juicy beef ribs that are oak-smoked and grilled on the santa maria grill, alongside solita’s famous chipotle-rubbed chicken.
Chef Deb’s home-style Chicken Soup “Azteca” warms from the inside with savory oak-roasted chicken, grilled corn, vegetables and chiles; while a roasted poblano chile stuffed with Mexican cheeses is served in a golden cloud for her Chile Relleno con Queso, atop a chile-rich Salsa Ranchera.
The Calamari & Garlic Shrimp cannot be overlooked, highlighting tender calamari steak marinated & grilled over wood, served in garlic butter sauce topped with shrimp, tomatoes, melted cheese & avocado.
Those looking to indulge in the sweeter side of solita will enjoy Chef’s Warm Cinnamon-Berry Bread Pudding, served with brown sugar sauce topped with ice cream, berries and agave syrup.
“I utilize warm spices and chiles in unexpected ways to enhance and complement the flavors of the other ingredients in our dishes at solita,” says Chef Deb whose menu is inspired by her many travels through Mexico.
“If you’re looking for a comfort food, there’s no better place to turn to than Mexico for inspiration. The use of chiles in this style of cooking allows us to play up some really exciting flavors.”
